Persimmon French Beans

With Persimon Bouquet ®

1-2 kakis Persimon Bouquet®
2 tablespoons honey
4 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon poppy seeds
8 oz. French beans
5 oz. arugula
3 ½ oz. Serrano ham or prosciutto

Place in a bowl, honey, oil, lemon juice and poppy seeds. Whip dressing and let stand in the refrigerator to cool. Wash the French beans and scald in salt water about 5 minutes; drain and let dry and cool. Wash the arugula and cut kakis into wedges. Mix with the French beans, add the slices of Serrano ham or prosciutto. Season with dressing.  Makes 4 servings
